- 25g fresh breadcrumbs
- 1 tablespoon Biladi Za’atar
- 1 lemon, zested
- 2 tablespoons extra-virgin olive oil
- 2 tablespoons fresh thyme leaves
- 4 salmon fillets
- 1 spring onion, finely sliced
Preheat the oven to 200°C. Put the breadcrumbs in a bowl and mix with the za’atar, lemon zest, oil, thyme and a grind of black pepper until combined. Place salmon fillets on a baking tray, pat dry with a paper towel. Top with the breadcrumb mixture. Bake for 12-15 mins until the salmon is cooked through and the topping is golden and crisp. Scatter spring onions on top and serve.
