- 1.4 kg chicken thighs and legs with bones
- 3 tablespoons olive oil
- 4 teaspoons salt, divided
- 2 tablespoons Biladi Za'atar
- 1 head cauliflower, cut into small florets
- 3 large shallots, quartered
Za'atar Oil Ingredients
- 4 tablespoons olive oil
- 2 tablespoons za'atar
- 1 teaspoon salt
- 3-4 garlic cloves minced
Preheat the oven to 220°C. Pat chicken down until dry (with a paper towel). In a small bowl mix together olive oil, 2 teaspoons of the salt and za’atar.
On a large baking tray mix the cauliflower and shallots with half of the za’atar. Coat chicken with remaining mixture and arrange between cauliflower. Sprinkle the chicken with remaining salt and bake for 35-40 minutes. While the chicken is baking, make the za’atar oil by mixing together all ingredients.
When the chicken is fully cooked, drizzle it with the za’atar oil and serve. You can also serve with hummus or tahini.
