Ingredients

  • 25g fresh breadcrumbs
  • 1 tablespoon Biladi Za’atar
  • 1 lemon, zested
  • 2 tablespoons extra-virgin olive oil
  • 2 tablespoons fresh thyme leaves
  • 4 salmon fillets
  • 1 spring onion, finely sliced

A fabulously healthy easy mid-week dish for Zaatar Salmon. Preheat the oven to 200°C. Put the breadcrumbs in a bowl and mix with the zaatar and olive oil, lemon zest, oil, thyme and a grind of black pepper until combined. Place salmon fillets on a baking tray, pat dry with a paper towel. Top with the breadcrumb mixture. Bake for 12-15 mins until the salmon is cooked through and the topping is golden and crisp. Scatter spring onions on top and serve.
